The French baguette just made it to UNESCO’s Intangible Heritage List. Why couldn’t we nurture our bread-making traditions? “We have hardly upgraded Indian cuisine and equipment. Our tandoor still isn’t user-friendly. Making Indian bread is a chore, so fewer people are trying to make it,” says Chef Amninder Sandhu.
